Got Ripe Bananas?

Hi! Here is my trusty banana bread recipe. I will include some of my favorite additions and alterations. I wasn't able to post to the 'recipe' section of our blog, so I guess this will be in the spotlight until we can move it over there!

BANANA BREAD

3-4 ripe bananas, smashed
1/3 c melted butter
1/2 c sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 c all-purpose flour

There is no need for a mixer here. Preheat the oven to 350. With a wooden spoon, mix the butter into the smashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan (or 2-3 mini loaf pans). Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

I enjoy adding 1 or many of the following: blackberries, blueberries, chocolate chips, toasted oats (regular oats toasted in a pan for a few minutes till crunchy), walnuts, or cinnamon. I usually eyeball the extra ingredients, but I would say that one loaf can handle about 1c of extra ingredients. Unless it's chocolate chips. Go with 2 cups (the whole bag) for a real treat.
