Got Ripe Bananas?

Hi! Here is my trusty banana bread recipe. I will include some of my favorite additions and alterations. I wasn't able to post to the 'recipe' section of our blog, so I guess this will be in the spotlight until we can move it over there!

BANANA BREAD

3-4 ripe bananas, smashed
1/3 c melted butter
1/2 c sugar
1 egg, beaten
1 tsp vanilla
1 tsp baking soda
pinch of salt
1 1/2 c all-purpose flour

There is no need for a mixer here. Preheat the oven to 350. With a wooden spoon, mix the butter into the smashed bananas in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4x8 inch loaf pan (or 2-3 mini loaf pans). Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

I enjoy adding 1 or many of the following: blackberries, blueberries, chocolate chips, toasted oats (regular oats toasted in a pan for a few minutes till crunchy), walnuts, or cinnamon. I usually eyeball the extra ingredients, but I would say that one loaf can handle about 1c of extra ingredients. Unless it's chocolate chips. Go with 2 cups (the whole bag) for a real treat.

January Meeting

Hi Ladies! Our January meeting will include and interview with Dr. Jennibeth Robles! Please come with any questions you may have. Dr. Robles has been such a positive force in the UIC OMFS community, and a special surgeon for all of our husbands to work with over at the VA hospital. We will be sad to see her go!

Happy New Year! I'm looking forward to seeing you all in January.

December Meeting Notes

Meeting Date: December 7, 2010

Rolling Items from last Mtg:
1. Officer Selection - Kos/Heidi to share President/Vice President Role. Bryn=Webmaster. Amanda=Secretary. TBD=Treasurer? TBD=Events Coordinator


New Business:
2. Date for charity donation - Dates discussed were Jan/Feb to kick off the new year, or May. Heidi also mentioned purchasing supplies and filling a suitcase full of medical supplies, clothes, toys, etc for the families there.
3. Book Club - Several wives expressed an interest in starting a book club. Will roll this item to January meeting and finalize.
4. Valentine's Day celebration - Brainstorm session on what to do for the hubbies for V-Day. Possibly make lunch and take into the clinic? Roll to January to finalize.
5. Meeting Format - Mrs Flick and Mrs Miloro will not attend our regular monthly meetings. Instead, they will co-host the yearly kick-off meeting in July. Both have pledged their support for our charitable contribution.
6. Selected Charity - Smile Train http://www.smiletrain.org/site/PageServer The club will make a once yearly donation in January/February. Each wife is welcome to donate as little or as much as she is able. The treasurer will collect the money and make sure the donation gets completed.
